California Fats, Oils, and Grease Work Group

The California Fats, Oils, and Grease work group (Cal FOG) was formed in 2001 as a result of increased regulatory focus on FOG-related sanitary sewer overflows. The work group consists of wastewater agency, regulator, consulting firm, and restaurant and related industry representatives. The focus of the work group is to utilize collective resources to develop FOG control tools and to provide technical support and information to the work group members.

Link to the TriTAC websiteCalFOG Mission Statement: Identify actions for reducing SSOs that result from blockages caused by fats, oil and grease in wastewater collection systems, and implement those actions to the extent feasible by a stakeholder group which includes wastewater agencies, regulators, restaurant and other industry associations.

The work group is formed within Tri-TAC, a technical advisory committee representing municipal wastewater management agencies. Tri-TAC members include the California Association of Sanitation Agencies (CASA), the League of California Cities, and the California Water Environment Association (CWEA).

Statewide WDR: On May 2, 2006 the SWRCB finalized their statewide approach to reducing sanitary sewer overflows. One aspect of the approach is developing a Sanitary Sewer Management Plan (SSMP) for FOG control. The released documents include the Finalized WDR, Monitoring and Reporting Program and a Fact Sheet. See the State Board's SSO pages for details and developments.
